Prep time: 20 min
Freeze time: 6 hrs or overnight
8 oz cool whip (thawed)
8 oz cream cheese (softened)
1/2 cup sugar
1 mango (small chunks)
15 strawberries (sliced)
2 kiwis (sliced and halved)
1 nectarine (chunks)
1 lime
4 T toasted coconut (to toast, stick in micro for 20 seconds)
Ok, put springform pan in freezer, then mix the sugar and cream cheese with an electric mixer, squeeze in 2 T lime juice and 1 t lime zest. Fold in cool whip. Then put it in the base of a springform pan and flute the edges with a pastry tube. Freeze that 6 hrs or overnight. Right before you serve, put the cut fruit in the frozen base and sprinkle toasted coconut on top. Take off sides of pan and serve!
