Combine the following ingredients. Melt and simmer 5 minutes. Remove garlic:
12 Tbsp butter
1 large onion, grated
2 garlic cloves
Combine the following ingredients and blend into butter and onion mixture:
12 Tbsp flour
4 tsp ginger root or 2 tsp ginger powder
3 tsp salt
4 – 5 tsp. curry
Combine and add to onion mix:
4 Cups coconut milk
2 Cups chicken broth
6 Cups cooked chicken, diced
Stir over low heat until thick. Add chicken just before serving; heat through.
