1 large chicken breast, cooked and cubed/shredded
1 box tricolor rotini, cooked
1 celery rib, diced
2 green onions, sliced
1/4 c. diced red pepper
1/4 c. diced orange pepper
1/4 c. diced yellow pepper
Dressing:
1 c. mayo
1/2 c. brown sugar
2 t. cider vinegar
1 t. salt
1 t. lemon juice
1 c. chopped cashews for topping
Directions:
Cook and cool pasta. While pasta is cooking, chop the vegetables and chicken. Combine all ingredients and dress with dressing. Top with cashews right before eating.
