Ingredients:
1-2 cans pillsbury sugar cookie dough
2 (8 oz) cream cheese
1/2 c. powdered sugar
1 T. vanilla or almond extract
Fruit (strawberries, kiwi, peaches, blueberries, bananas, raspberries, mandarin oranges)
Glaze:
3/4 c. water
3/4 c. sugar
1 C. OJ
1/4 c. lemon juice
3 T cornstarch
Directions:
Slice cookie dough rolls and press circles together on a pizza pan. Bake 10 minutes at 350. Cool and then blend the cream cheese, powdered sugar and extract together and spread on cookie. Layer fruit aesthetically on top. Boil water, OJ, lemon juice, and cornstarch. Cook one minute and then cool and paint fruit.
noelle's tips:
1. the glaze makes a ton so don't feel like you have to use all of it. Or cut down accordingly.
2. silicone pastry brush works GREAT for painting fruit.
3. mixing cornstarch with water (by shaking) first before boiling helps get all the lumps out.
4. If you're going for budget, buy canned peaches. :) If not, get certain fruits that have to ripen a few days in advance.
