Natalie's German Apple Cake

This was the hit of the BYU game party. Thanks again for making it Noelle--delicious. I like to serve it with ice cream, to cut the sweetness.

Cream together:
2 large eggs
1 cup vegetable oil
2 cups sugar

Combine:
1 tsp. baking soda
1 tsp. salt
2 cups flour
2 tsp. cinnamon

Add:
4 cups thinly sliced tart (like Granny Smith) apples
1 tsp. vanilla
1 cup chopped walnuts or pecans

Batter will be very stiff. Pour batter into 13x9-inch greased and floured pan. Bake in 375-degree preheated oven for 45 to 50 minutes.

Frosting:
1 6-oz pkg. softened cream cheese
1 1/2 cups (or more) powdered sugar
1 tbsp. softened butter
1 tbsp. vanilla
Beat until smooth. Cool cake before frosting. May garnish with chopped nuts, if desired.
