8 chicken  breasts
3 eggs well beaten
3 cloves garlic, minced
salt and pepper to taste
1 1/2 cup bread crumbs
3 T. olive oil
3 T.  butter
fresh mushrooms, sliced thick
4 slices swiss cheese
1/2 cup chicken broth
juice of one lemon
 
Add garlic and salt,pepper to eggs. Immerse chicken in eggs for 1 hour.
Roll  in bread crumbs and sauté in olive oil and butter until golden brown. Place in large, shallow pan. Reserve butter and sauté mushrooms-sprinkle over chicken. Pour chicken broth over chicken and place half a slice of swiss cheese over chicken. Cover pan with foil and bake for 30-40 minutes at 350 degrees. Squeeze lemon juice over chicken after baking.
