2 lbs. ground beef
2 T oil
2 finely chopped onions
2 cloves garlic (minced)
1/2 lb mushrooms (sliced)
1 1/4 tsp. salt, pepper, oregano
2 pkgs frozen chopped, drained spinach
Brown ground beef well in oil in a large pan over high heat. Drain grease off and add onions, garlic and mushrooms. Reduce heat and cook stirring occasionally until onion is cooked. Stir in seasonings and spinach and cook about five minutes longer. Add beaten eggs, stir until set. Serve with garlic bread and salad.
