This is a new favorite and totally delicious with corn bread :)
1 ½ cups milk or half & half (I use half & half)
1 can cream of potato soup
1 can cream of chicken soup
1 cup chicken broth
½ cup chopped green onions
8 oz. sliced mushrooms
1 green bell pepper, diced
2 cups cooked cubed (or shredded) chicken
1 can whole kernel corn, undrained
1 4 oz. can chopped green chiles
1 ½ cups shredded cheddar cheese
Combine milk, soups and broth in saucepan. Blend well. Heat thoroughly.Meanwhile, sauté green onions, green pepper and mushrooms. Add sautéed vegetables, corn, chiles, and chicken to soup mixture. Heat thoroughly. Remove from heat and add cheese. Stir until melted.
