Ashley's Pumpkin Bars

4 eggs 2 c. sugar
1 c. veg. oil 2 c. canned pumpkin
2 c. flour 2 tsp baking powder
1 tsp. cinnamon 1 tsp soda
3/4 tsp salt 1 c. chopped nuts or 1 c. raisins (optional- I don't use either I like them plain)

Grease a 15 by 10 jelly roll pan. In a bowl beat eggs until foamy. Add sugar, oil, and pumpkin. Beat for 2 min on med speed. Add flour, baking powder, soda, salt, & cinnamon, beat 1 min at low speed. Stir in nuts. Pour into pan and bake at 375 degrees for 15-17 minutes or until toothpick comes out clean.

Frosting:

1 pkg 3 oz cream cheese softened
1/3 c. margarine or butter, softened
1 Tbsp. milk
1 tsp vanilla
2 c. powdered sugar

Beat cream cheese, margarine, milk, and vanilla until fluffy. Add powdered sugar, blend until smooth. Spread over cooled bars. Store leftovers in the fridge.
