Sausage Tortellini Soup

In large pan, brown:
1 lb mild Italian sausage
Drain fat and add:
1 chopped onion
2 cloves minced garlic
Cook until tender and add:
1 ½ cups water
2 14 oz cans beef broth
3 peeled and sliced carrots
1 cups sliced zucchini
1 28 oz can crushed tomatoes
1 teaspoon basil
1 teaspoon oregano
4 Tablespoons chopped fresh or 2 teaspoons dried parsley

Simmer for 30 minutes. Add 8 oz tortellini and simmer for 10 more minutes.

This earned rave reviews and is tasty and filling! But I have learned: it MUST be mild sausage, light on the herbs, heavy on the carrots, slender zucchini, and fresh cheese tortellini is best (just watch for the expiration date and go the day before or day of to snag for .99 instead of $5!)
Can't wait to have it again with those oatmeal rolls!!!
